It's beginning to look a lot like Christmas


This post is going to be brief because today was my Christmas and I’m spending it with my family. My dad is a firefighter and worked Christmas day so we planned a Christmas on the weekend. We drove to my grandparents’ house on Camano Island which they had decorated festively for the occasion. There were cheesy Christmas figurines on every surface, a little tree decorated in red and gold, and the table was set.

I come from a very small family, I am an only child, both my parents are only children, and my grandparents on my mother’s side are my only living grandparents. We unwrapped our gifts, this year I received an Olivia Burton watch, an Amazon Alexa, a pair of microwavable slippers, and a shopping haul with my mother.

We bought an aged pot roast, which we applied a paste to consisting of tri-colored peppercorns, olive oil, garlic, fresh rosemary, fresh thyme, lots of salt, and garlic. We cooked it in the oven at 450 for 45 minutes and then added chicken stock to the roasting pan and turned down the oven to 350 until the meat was between 125 and 130 degrees Fahrenheit. Removed from the oven and let rest for 15-20 minutes before removing the bones which slipped off the rest of the meat quite easily. We had sides of sweet potatoes and regular potatoes. This meal far outdid any turkey I had ever had, it was absolutely fabulous. The edges were quite salty but the meat had acquired so much flavor from the seasoning paste and the aging process that it was absolutely fabulous.

After dinner, we sat and talked and my grandma, grandpa, mom, and I played a game of bridge, a game which I am not very good at as of yet. We left around 8 pm and got home around 10:30.
